

Russian & Chips open sandwich
Ingredients
- 500 g frozen potato chips
- Chip seasoning salt, of choice
- 10 ml oil
- 4 smoked Russians, scored
- Crosse & Blackwell Kasi Sweet & Creamy Mayonnaise, to serve
- 4 slices Albany Superior Sliced Bread (White or Brown)
Method
- Cook potato chips according to pack instructions. Season with chip seasoning salt. Allow to cool slightly before handling.
- Meanwhile, slice the Russians 1cm intervals, half-way down, through the sausage, (don’t cut through). Heat a non- stick frying pan with oil. Fry the Russians for 3-4 minutes turning regularly.
- Spread Kasi Mayonnaise onto the bread and top with chips. Top with cooked Russian and serve drizzled with Kasi Mayonnaise.
Variations, Hints and Tips:
- Alternatively make a sandwich using two slices of bread, cooked chips, and sliced Russians.
- Replace Russian with canned pilchards as a healthy alternative.
- Vienna’s can be used as an alternative to Russians.
