Chicken & Avocado Salad


  • 4 chicken breasts, roasted and sliced
  • 2 cups Tangy Mayonnaise
  • 2 Tbsp. lemon juice
  • 3 tsp. Colman’s Mustard
  • 2 tsp. garlic, crushed
  • 2 avocados, sliced
  • 25g lettuce leaves
  • 3 tomatoes sliced
  • 22g rocket leaves
  • Salt & pepper to taste


  1. In a small bowl, mix together the Tangy Mayonnaise, lemon juice, Colman’s Mustard, crushed garlic, salt and pepper. Set aside.
  2. Combine together the rest of the salad ingredients together in a bowl and toss them well.
  3. Gentle drizzle the dressing over the salad and serve.

Serving Suggestion:

  • Toast some pieces of bread with olive oil, salt and pepper and throw in your salad for extra crunch.
