- 4 chicken breasts, roasted and sliced
- 2 cups Tangy Mayonnaise

2 Tbsp. lemon juice

3 tsp. Colman’s Mustard

2 tsp. garlic, crushed
- 2 avocados, sliced
- 25g lettuce leaves

3 tomatoes sliced

22g rocket leaves
- Salt & pepper to taste
- In a small bowl, mix together the Tangy Mayonnaise, lemon juice, Colman’s Mustard, crushed garlic, salt and pepper. Set aside.
- Combine together the rest of the salad ingredients together in a bowl and toss them well.
- Gentle drizzle the dressing over the salad and serve.
- Toast some pieces of bread with olive oil, salt and pepper and throw in your salad for extra crunch.
